Gelato is Italy’s version of ice cream. You may have heard that gelato is healthier. That is because we make our gelato with milk and not heavy cream, no eggs either, thereby creating a lowfat product. Typically ice cream ranges from 18% - 26% butterfat while gelato is under 10%. Because gelato is less fatty, the flavor is not masked like it is with ice cream and there is no greasy palate after effect so there is no need for the “glass of milk to wash it down.”
Further enhancing the taste is the fact that gelato is served at a warmer temperature than ice cream. This enables the flavor to be tasted immediatley. Less fat and warmer temperature means a richer and fuller flavor.
Gelato is a much denser and creamier product. During production of ice cream, 100% air is whipped in, greatly increasing the volume of the product. Gelato is usually 30% air which gives the dense and creamy texture everyone loves.
